I love the mirror finish on this blade. I don't know why you don't see more mirror finishes like this on knives. Is it because it shows scratches? 100% my opinion but I would much rather have the mirror finish with scratches showing than say something like a Kramer Damascus with it's over the top unnatural looking chevron patterns. As you would expect this knife has scalpel like sharpness. You also have a very comfortable handle that balances well in the hand, Due to this knifes hard steel I think I went for over a week without even having to hone let alone sharpen this blade. Also, I should admit that there's probably some things I shouldn't have cut and some cutting techniques that i maybe shouldn't have used still, no chipping or torquing, nonetheless. I guess my one complaint if you can even call it that, is that after watching chef Brandon's videos on YouTube on knife sharpening, I've become quite fond of using my stones. Obviously, I won't be getting much sharpening practice with this knife. My other positive gripe is Hatono also has this knife in the Bunka shape and it by far is the coolest looking Bunka I've ever seen, but it's been sold out for a long time. I wish it was back in stock ASAP.
