Description

Zuma is a Cutlery and More exclusive hammer forged chef's knife that we made sure checks all the boxes on your list for performance, function and feel.

Construction:
First, we insisted that the knife be forged. Although labor intensive, the hammering process is worthwhile due to the increase in strength and ease of sharpening, which is a result of the steel's grain structure becoming better aligned. It also allows for a single, thicker piece of steel to be used. Once we determined that this knife would be forged, we then knew that it must be hand ground and sharpened. A distal taper ensures that the knife will cut smoothly and a convex grind gradually thins out the blade starting right at the spine. This type of blade geometry and balance allows the knife to glide effortlessly through foods. No need to apply lots of pressure, in fact too much pressure may actually be detrimental to the knife's edge as it flies through your ingredients and hits the cutting board.

Profile:
The Japanese gyuto shape was influenced by Western chef's knives, however mainly the French style knife which has less of a "belly". In function, the flatter edge curve allows for more contact with your cutting board, completing full cuts with less movement. This is important, especially for those who employ more of a push cutting technique or the vertical "tap" chopping. We took this a step further and increased the blade height to 2" at the heel, giving you better knuckle clearance and we designed a bit of a curve right near the tip of the edge, which does allow for some "rock and chop" action when needed. We also ensured that this knife actually measures a full 8.25" (210mm) along the cutting edge -- a size that most of our customers have come to love.

Steel:
Once we established the above requirements, we were in search of what might be the best steel to use. Our maker recommended to us BG42, which is an American stainless high speed tool steel. After some research and discussion with the blacksmith, we discovered that this steel is ideal for forging and offers a great balance of corrosion resistance, toughness and edge retention. For example, the hardness rating of 61-62 HRC falls in between steels like VG10 and SG2, but has better toughness, which was imperative if we were going to make a knife as thin behind the edge as we reasonably could without making it too fragile.

Finishing:
The finish on the Zuma starts with what is referred to as a "kurouchi" or blacksmith's finish and is a result of the forging process. The durability of kurouchi finishes vary, but the Zuma goes through an additional black dye process that makes it a little smoother and more wear resistant. The mid blade is then ground and polished to a hazy "kasumi" finish, while the very edge is highly polished. This makes for, what we think, is a beautiful overall appearance and enhances the food release throughout. We chose an octagonal ebony handle in the traditional Japanese style that is both smooth and comfortable, yet solid. Last but not least, we made sure that our artisans polish the spine and choil areas of the blade for comfort using any grip.

    Zuma has me wearing a smile.

    Unless it’s from a brand like Wusthof I never know what to expect when ordering a knife online. Some knives come in needing to be stropped, some knives come in needing to be touched up on the stone, some knives don’t glide through the food the way that you read online and hoped for- but then you get the ones that come in and immediately put a smile on your face. That’s what happened to me the first time that I used my Zumas. And it’s what has happened to me every time I’ve used them since that first time. The tomatoes and the peppers were one thing, but what really got me was when I hit the sweet potatoes. Glided right through. I haven’t had them but a couple of weeks so I’m not sure how they are to sharpen and Lord willing it’ll be a while before I need to find out, but so far I can’t help but not to wear a smile whenever I’m using them. I do like the chef’s Knife a little more, it became my daily instantly. It’s just because of the length, but the bunka is a beast too! Very happy with these knives so far!

    Great pair of knives

    I’ve had both of these knives for quite sometime. Ordering another of each was a no-brainer. They arrive razor sharp and retain that edge for a while. Their geometry is workhorse leaning but cut as well as many lasers. Weight and balance are great. Zuma knives are one of the best bang for your buck knives I’ve ever experienced.
