Love it! Love it more!! And love it more again!!!
I've been a home cook for a long time. Have a set of Wustoff Classics that lasted me 15+ years. A couple years ago decided to start trying Japanese knives. I have purchased about a dozen now at different price points. Granted, this Yoshikane is the most expensive of the group. And it's price has gone up about 50% since I bought it. But OMG is it worth it! This knife is wicked awesome. It is big and heavy, not for the faint of heart or for a small cutting board. And the k-tip is fragile so you gotta be careful with it. But it destroys everything in its path. The blade is tapered so thin it absolutely cuts like a laser. But it's also heavy and the weight naturally glides through dense foods like nothing. I fine cut garlic with it, and then blast through large carrots and potatoes, etc. I absolutely love this knife. There's nothing it can't do, push and pull cut.
If it is in your budget, get it. You won't be disappointed.
