I bought the Yaxell Ypsilon 4.75 knife a month ago. It is absolutely beautiful, extremely well balanced and very, very sharp. It's really fun to use but I have to watch my fingers when I cut. I expected this knife to show the same level of excellence as the Yaxell Ypsilon chef's knife that I purchased several months earlier and it did. It was also agreat price.

This is the smaller companion to my 8" Yaxel Ypsilon chefs knife. This is now my go to knife. This knife was sharp... I mean razer sharp... right out of the box. Now it is on me to keep it sharp. Just like its big brother, the knife is beautiful. The shape of the blade is not like a normal pairing knife. It has a nice curved cutting edge. I am amazed at the dedication and skill required to produce this working work of art. I am looking forward to a lifetime of use.
