Tojiro Classic 10.6" Chef's Knife

This knife was very sharp right out of the box. It has a thin blade ideal for veggie slicing. However, the sliced veggies tend to tenaciously stick to the sides of the blade which was sort of expected. The balance was good and even though the handle was not as long as my German knives it still fit the hand well. I understand this knife is supposed to be a bit toughter (less brittle) than most Japanese knives which is what I wanted.

The shipping was fast and efficient and the knife is absolutly stunning in person. It's been great so far .

Received this knife really fast, it is very sharp and nice looking too. Have not used it yet but I know it will be good, I have other knives with vg-10 steel, it is very good at holding a sharp edge.

I'm really enjoying this knife. I wanted try a larger Chef's knife than those that I currently own (8" and less) -- I first tried the 10.4" and found it to be too large, but this 9.4" is a nice step up. No concerns here about extra weight becuase the thinner blades on Japanese steel make the longer knife comparable in weight to my shorter blades.

I've owned one of these since 2011 and it has been my daily driver in professional kitchens and now at home. It is my go to for wedding gifts or house warming gifts. The quality for price is amazing and is a great way to introduce people to knives that aren't exactly the typical western profile.
