    Initial Impressions

    Out-of-the-box was under par for Miyabi quality. Purchased the Paring and 6" Chef and both had minor issues, the first being the edge did not come as sharp as other Miyabi's I have bought (the Birchwood and Hibana models came the sharpest) and second the pakkawood handle was very dry and need some oil to refresh it. Again this is the out-of-the-box impression so I haven't sharpened the FC61 steel yet on Japanese stones.
