The Miyabi Kaizen Slicing Knife features a long, slender blade and curved cutting edge to take beautiful cuts from prime rib, roast turkey or pork loin in one smooth sweep. Use the pointed tip to separate meat from bone, then make thick or thin slices. The Miyabi Kaizen collection combines the best hardening technology with the artistry of traditional Japanese craftsmanship. The resilient core of VG10 super steel (5000DP) is protected by a stunning 64-layer flower Damascus pattern. The Cryodur blades feature exceptional sharpness and durability thanks to their innovative, ice-hardening treatment. Artisans hand-hone the blades with the historic Honbazuke method. This attention to detail translates into precision cutting for Miyabi Kaizen users. The blade is balanced by a refined D-shaped handle made of black linen micarta. With a wood-like texture, the comfortable handle won't slip from your hand and acts as a moisture repellent. Handcrafted in Seki, Japan.

    Super Sharp

    I bought this carver specifically because I was tired of tearing the skin on breast meat for the Thanksgiving Turkey. This knife performed magnificently. The obvious quality and beauty of the knife will make it a family heirloom

    Very good for the price range

    This is my most recent addition to my set. These knives are very well made with above average materials. Great set for anyone who understands the care and intended use of hardened, very thin blades. All of Kaizens I have purchased have been very consistent in quality, fit and finish. This slicer is the only one that I notice the secondary bevel was very short (i.e. distance of Hasaki to Shinogi line). Other than that it slices boneless prepared meats like butter.
