Description

The Miyabi Kaizen II Slicing Knife features a long, slender blade and curved cutting edge to take beautiful cuts from prime rib, roast turkey or pork loin in one smooth sweep. Use the pointed tip to separate meat from bone, then make thick or thin slices. The Miyabi Kaizen II collection is a stunning example of the finest Japanese craftsmanship. Features excellent cutting edge retention and sharpness. The core of the blade is surrounded by 49 layers of steel which make up the unique Damascus design pattern on the blade. The Pakkawood handle sits comfortably in the hand, allowing firm control and tireless working.

    Miyabi Kaizen II 9.5” Slicing Knofe.

    I purchased this knife a short time ago as a gift and decided to keep it.

    I have only used it once. But soon the weather will be better suited for smoking and grilling and the knife will be used often.

    However I did use the knife to slice and then butterfly pork tenderloin for schnitzel.

    The knife worked great with nice clean effortless cuts. I like the handle, feels real nice in my hand.

    Additionally the Damascus design pattern is stunning . Absolutely beautiful.

    I think its a great knife and plan on purchasing a few more Miyabi knives.

    I'm not a Chef, don't work in a kitchen professionally. I love to bqq, host quite a bit, so I do put some miles on my kitchen equipment but nothing major or serious. Average Joe. That being, this is a solid knife for salmon filet, tritip etc. But not necessarily "better" than a decent Chef's knife. I don't really notice a difference in the quality or presentation of the meat when I use this knife to cut/plate a ribeye or a brisket vs using a decent chef's knife.

    Don't get me wrong, I don't regret the purchase as the knife does what is intended to do, but I wouldn't call it a must have addition as you can use your chef's knife for the same purpose (If I were to do it again, I would really really splurge on an amazing chef's knife and forego a slicing/carving knife). However, this knife looks much better on the cutting board while serving guests it is sleek/slender and really gorgeous.
