Miyabi Kaizen II 8" Chef's Knife

Amazing knife, just not for me. I've used it almost every day since I got it, and while the craftsmanship and edge are fantastic, the 6" version feels a bit handle-heavy rather than balanced, which isn’t my preference.

I have never owned a real sharp chef’s knife so my experience is limited. However, I have prepared many delicious dishes but one thing remains the same…the struggle to cut, mince, chop and slice ingredients without elbow grease. This knife is amazing; no more extreme force cuts with ease almost unreal. Scary sharp right out of the box!!!

This chef knife has a very thin super sharp blade making precision cuts a breeze. The Kaizen II also is very light weight so there’s no fatigue during long cutting/chopping sessions. Further, it’s simply a beautiful knife with incredible craftsmanship. The most attractive aspect for me is the handle which features a smokey grey, not black, color that is rare on Japanese knives. My only issue is that there are some imperfections on the Damascus pattern out of the box, minor fine scratch here and there but nothing major.
