The Misono UX10 Stainless Steel Gyuto is a multi-purpose Western style knife, designed for slicing meat, fish, and cutting a head of cabbage and more. It's also useful for those in the meat industry who cut large amounts of meat.

    Perfect segue into Japanese knives from Western

    I have been using Henckel and Wustof knives all my life. I have been a bit frustrated with them due to the fat wedge throwing off my cuts when I am trying for perfection, and I was ready for a longer knife.

    This knife fits the bill perfectly, The western handle is easy to hold, and the blade is thin and super sharp. This knife delivered exactly what I had hoped for... consistent ability to deliver precise, accurate cuts for brunoise, julienne, and slices

    I knocked off half a point because the bolster is angular and a touch pokey for my taste, I'd prefer a more rounded and comfortable bolster over an aesthetic bolster. Also, how the tang fits into the bolster needs to be sanded down for smoothness, which I feel should have been done at the factory.

    Overall, a very satisfying purchase and I would happily repeat it. I suspect over time, my stars will go up and this will be a 5 star purchase over the long haul.
