I have been a professional chef for 30 years. I started using MAC knives about 16 years ago and will not use any other brand since then. This particular knife I bought to do sushi with. My other Chef knives are all MAC's. Think of it as if you were a mechanic. You buy only the best tools for your trade. My trade is being a Chef and I think that MAC makes the best blades in the business.
