The Mac Professional Flexible Fillet Knife is perfect for filleting delicate fish such as sole and flounder. Because of the narrow profile and extremely thin blade, this knife is also great for slicing bite-size pieces of sashimi from a ready-to-cut section of sashimi-grade fish. The weight of the bolster in combination with the blade makes this extremely well balanced in the center of your hand. Cut through most foods using minimal effort. Made in Japan with a 25-year warranty.

Flexible!
This is my first MAC knife and it is excellent! I use it for removing the skin after breaking down the fish with a deba. It is so thin and flexible that it smoothly glides through the fish with little friction. I highly recommend it!
