Description

For their 200th anniversary, K Sabatier has introduced a line of cutlery that builds upon the French knife making tradition while bringing forth a lightweight and modern design. These blades are crafted of Swedish Sandvik 14C28N nitrogen enriched stainless steel, which is known for its excellent edge holding ability and superior edge retention. The blade goes through a cryogenic tempering process that further increases the hardness of this steel, making them harder than other K Sabatier knives, so the edge retention will be better. The K Sabatier 200th Anniversary series offers beautifully finished and indestructible G10 fiberglass handles, ultra fine grinds and hand finishing.

Sabatier Aine & Perrier has been making high quality chef's knives in the Bellevue village area of Thiers, France for over 200 years. They registered the K Sabatier trademark in 1834, making them arguably one of the oldest knife makers in the region. Due to being an unprotected mark that was used for many years, you may find the Sabatier brand on many knives of varying quality and origins. Rest assured, K Sabatier is one of, if not the original, Sabatier knife.

    Like 14C28N for a paring knife

    I wanted to get one of these limited production knives to complement my K. Sabatier 200th Anniversary Edition 7” Chef’s knife. Great fit and finish. Very sharp out of the box. Near indestructible handle. I mostly use it for citrus fruits, slicing medium size tomatoes and in-hand paring of mangos. 14C28N is one of my favorite kitchen knife stainless steels.
