Ittetsu Aogami Super Carbon Steel 9.4" Gyuto

The first knife I received came with a slight flaw in the blade, which showed up after the first few uses. I was provided with a return label after I reported the issue and provided photos, and received a new blade when the original one was returned. The new one is perfect, very sharp, and is already developing a nice patina on the carbon steel edge. I'm starting to enjoy the knife, which is longer than I'm used to, and have to give top marks to the customer service team. Thanks, folks!

This came out the box very sharp!!! I’ve been treating this like my workhorse and haven’t been disappointed. I hone with a fine diamond rod and it’s right back. Caution with the edge because it can rust fairly quickly. Just proper carbon knife preventive care and it won’t be a problem. ⭐️⭐️⭐️⭐️⭐️

Do not use the rough stone ! The knife is very thin and made with Blue Steel . Use with stone (1000) is more than enough to sharping. l work in Sushi Restaurant in Michigan that the restaurant is kind busy and l only sharp every three days. The handle is not sleek! Because we are working with food service and must wear the glove during business hours. One thing must keep in mind , after use must be clean and dry ! The edge become a little be rust if left humanity and citrus such lemon.

Ittetsu Aogami knife has missing streaks of cladding in the middle of the knife I expect my knives to look good as well as being functional wouldn't even cut through a Potatoe
