I have never held a Hatsukokoro knife that didn't feel great in my hand. I would just like to thank Hatskukokoro for that right now. I wish I could say the same about Zuma and Yoshikane, but that'll be for another review. Not only does an expensive knife have to feel great in my hand before I buy it, but there must be some unique feature that must stand out amongst my sea of German and Japanese knives. Like this knife here for example. Here you have a knife with an incredibly comfortable handle (thanks again Hatsukokoro) and the uniqueness stands out in how light this knife is. This 8.25-inch Gyuto only weighs 4.7 ounces, which is lighter than any 7-inch blade that I own. It's even lighter than some of the 6-inch knives that i have. It's like prepping food with an 8-inch razor-sharp feather, which makes this knife very fun to use. It's definitely ranks in my top 4 favorites. My other top 3 knives cost around twice as much, so you are getting a good deal in my opinion. Comfortable,light,nimble and great razor sharp SG2 steel. You just can't go wrong with Hatsukokoro.
