Description

The Global Hollow Edge Brisket Slicing Knife features a long, slender blade and sharp cutting edge to take beautiful cuts from prime rib, roast turkey or pork loin in one smooth sweep. The scalloped grooves on the sides of the blade edge helps with reducing friction and sticking of foods. Global knives contain two innovative features, their edge and the way they are balanced. The most important detail of any knife is its edge, and the Global edge is truly its signature. Global knives are sharpened or ground steeply to a point, and to an acute angle while resisting rust, stains and corrosion.

From its modest inception, Global has developed into one of the most successful brands of professional kitchen knives in the world.     Just right!

    I own a fleet of brisket slicers: 12”, 14”, serrated edge, non-serrated, etc., and it has been difficult finding one that won’t tear the meat or ruin the bark, but nothing but clean slices with this Global! Surprisingly sharp and thin behind the edge for a knife that slices large cuts of meat, and aided by its weight it feels like it is falling through brisket, bark and all. Thanks to the thickness the knife it doesn’t flex like other brisket slicers. The handle is perfection allowing me to slice through multiple briskets without fatigue, and is surprisingly grippy even when coated in tallow.

    This is my second Global Model X knife (the nakiri was my first), and both have instantly become the MVPs of my barbecue knife set.
