Description

We worked directly with Global to improve upon one of the best selling Japanese Nakiri knives ever made. Our Exclusive Global Model X 7" Nakiri Knife is the multipurpose workhorse of the kitchen, providing the ultimate balance. Designed for chopping meat, root vegetables and big prep jobs.

Global knives contain two innovative features, their edge and the way they are balanced. The most important detail of any knife is its edge, and the Global edge is truly its signature. Global knives are sharpened or ground steeply to a point, and to an acute angle while resisting rust, stains and corrosion. The straight edge results in a dramatically sharper knife which stays sharper longer. The edge on a Global knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife.

From its modest inception, Global has developed into one of the most successful brands of professional kitchen knives in the world. Still crafted by hand in Yoshikin's factory in Niigata, Japan, Global knives are manufactured to extremely high and exacting standards. Global has attracted much acclaim over the years and received numerous awards. A thousand years ago, Japanese sword-smiths developed the high art of sword making to provide strong, sharp blades for the Samurai, the feared warrior caste. Like the Samurai swords before them, each knife is carefully weighted to ensure perfect balance in the hand. Global knives have been hand crafted in Japan using the same traditions and developed using the best raw materials available.

    Very nice!

    I gotta say….. i love this knife.

    Sharp and cuts wonderfully!

Very substantial . Great balance It has cut several watermelon and heads of cabbage with ease! Onions didn’t stand a chance……and cut partially frozen meat like butter, Almost “cleaver “ like….

I would highly recommend for those who want a thick, sharp and heavy knife.

    Hefty knife

Great knife. I have a whole set of global knives. I have collected them one at a time. This one in particular has great ergonomics and balance for the heft of the blade. I have been using it to chop all kinds of garden produce. My wife said it might be her new favorite.

    This knife is THICC!

This is my first Global knife, and I’ve always been concerned if I would like the handle. Review after review would mention people fall into two camps: those who love the handle, and those that hate it… well… I love the handle! It has a great shape and a great weight, so don’t be afraid to try one!

Specifically regarding this knife: yes, it “technically” is a nakiri, a vegetable knife, and straight out of the box it excels at that task: onions, shallots, lettuce, carrots, it chops through it all with exceptional ease as any laser-sharp nakiri should. Things change when you chop garlic with this 4.1mm thick knife and it effectively becomes a replacement for a Chinese cleaver. Just like a cleaver, its weight allows it to crush garlic with the spine and fall through whatever it’s cutting.

But chopping vegetables isn’t why I bought this knife: it was designed for barbecue and that is primarily what I cook. Portioning country-style “pork ribs”, cubing pork belly, chopping brisket and boneless beef ribs, and even slicing steak, all things I would NEVER do with a standard nakiri, but this one has replaced my mid-weight cleaver while still having a wide enough blade to transfer ingredients and chopped meat.

Back to the handle: I was also concerned about it being slippery when working with grilled meat, but, so far that hasn’t been an issue, so the brisket knife is next on my list after the nakiri exceeded my expectations.

    Well done, Global!

    Solid Performer

I was surprised by the heft of this knife. Let's just call it a Nakiri Plus. Impressed by the entire Global X line

    First Global knife

It’s the sharpest knife sharp out of the box . I like the weight and beefy feel . But it will cut vegetables extremely thin . And it go through a chicken like a butcher knife. I love it
