Enso SG2 5.5" Prep Knife

This knife replaced a 5.5” Santoku which had a thicker blade, wider bevels, and softer steel. It excels at push cutting small fruits, vegetables, and light prep work. The blade is thin, the heat treat of the SG2 steel is really good, and the handle works well for me & my wife. I highly recommend this knife!

I read the detailed reviews of others before purchasing. I had never seen a Bunka knife before. I am not sure I know yet how to effectively utilize its tip. However, it is as razor sharp as others have said. The handle fits my small hand very well. I will use this for virtually all food prep until I get the same one with a longer blade and then will use the two of them for virtually all food prep.

Great knife for light jobs--like an extension of your hand.

I love this knife. I bought it for my daughter to use. She is intimidated by the larger chef knives. It’s very sharp and easy to maneuver.

Wonderfully light, handles like a dream, hugs the curves is perfectly balanced and beautiful.

The red spacers between the handle and both the bolster and end cap highlight the red center of the handle medallion, and are understatedly elegant.

With a nice pinch grip, there is enough clearance for even larger hands to chop cut.

The patterned, polished blade is gorgeous, amazingly thin, and seems to do a decent job of releasing sticky foods.

The factory edge on the blade, out of the box, is the sharpest one I've ever had, and I am a fanatic for keeping my knives sharp. The factory edge will do an effortless plunge cut on the thinnest mail catalog paper.

My new 'stretch goal' will be to keep it this sharp, but the SG2 steel will probably hold this edge for a long time.
