Enso Hizashi 5.5" Prep Knife

I'm going to swear an oath to the Cutlery & More community right now. I Promise to never relegate this amazing and attractive little knife, to a mere back up, to some larger knife. And why should I? This little Tasmanian devil has good blade height for its small size, easily keeping my knuckles off the board. The comfortable non-octagonal handle works out great for this little blade. The big highlight in my opinion, however, would have to be the steel. This is VG10 at its best. When working with a smaller knife like this, a big reason why taking on things like Melons, Potatoes and sweet potatoes becomes possible for me, is because of the ultra-sharp 12-degree edge, that Enso has absolutely perfected. As much as I enjoy my Expensive 9.5-inch Enso hand-forged Gyuto. The real gems (in my opinion) are this knife and the 7-inch Bunka in this Hizashi series. Gems, that are actually nicely priced by the way, and well worth the reasonable cost.

I love the feel of this prep knife. It is light and even though I have a large hand, it feels perfect. Since I have purchased this knife I have used for everything to what is can do and what it can't do. so far it has done everything I want in a prep knife and a little bit more. It's a chopper, slicer, push chopper, and I've even cleaned a fish. Oh, have I mentioned how beautiful it is? I love it.

The blade is well built, has balanced handling, and it's a great and deft workhorse for most prep needs. It keeps it's edge well if it's cared for appropriately.
