Enso HD 5.5" Prep Knife

My second purchase of an Enso HD series knife. I happen to like VG10 steel because you can attain a mirror edge razor sharp profile. I also like the full tang & micarta scales (handle) because it will last forever and withstand hot water and strong soap.

Not terribly long ago, we purchased 5 knives from the Enso HD line. We've put all of them through their paces and love each and every one of them.

Both the 5.5" prep knife and the 7" Bunka appealed to us as a unique replacement for a Nakiri from a different maker that we no longer use. We went with the 5.5" prep knife, as both a Santoku and a Gyuto were already in the HD mix and a 7" Bunka seemed a bit redundant.

We couldn't be happier with the choice. It's as sharp as a razor, comfortable in the hand, and the uses are numerous.

This like a Ko-bunka. Fun knife for small quick prep. Like making a salad, cutting the carrots, the cucumbers tomatoes. Prepping some garlic and shallots or small onions.

Like I've noted in other reviews of ENSO HD I would consider this a transition knife. Japanese style or shape but western handle, It's not full on Japanese geometry a little more robust, but that means it's also more forgiving. Sg2 and harder steels can be very chippy if mishandled even slightly.

This knife exceeded my expectations. It’s well balanced and razor sharp. I would recommend this knife for anyone looking for a quality prep knife at a reasonable cost.
