Features

The Enso Ginsan Nakiri Knife features a unique rectangular shape and slightly upturned edge, making it the perfect tool for precisely push-cutting all kinds of vegetables. The Nakiri's blade shape also allows its length to remain consistent after years of sharpening. Nakiri knives are also known as "nakiri bocho", a Japanese-style knife used for chopping vegetables. The blade is made from Ginsan stainless steel, prized for its excellent hardness, edge stability, and corrosion resistance—delivering a sharp, reliable edge that’s easy to maintain. Finished with a refined nashiji (“pear skin”) texture and crafted in Seki, Japan, this knife pairs serious cutting performance with standout style. An octagonal stabilized maple wood handle offers a secure, balanced feel, while the series’ signature choil notch with rounded spine and choil makes it exceptionally comfortable in a chef’s pinch grip for long prep sessions.

  • 6.5" (165mm) nakiri allows to cut all the way through to the cutting board without having to use a horizontal push or pull
  • Slightly upturned edge, making it the perfect tool for precisely push-cutting all kinds of vegetables
  • 61-62 Rockwell Hardness; Ginsan stainless steel delivers excellent hardness, durability, and corrosion resistance with a textured Nashiji ("pear skin") finish
  • Choil notch with rounded spine and choil for exceptional comfort, particularly when utilizing a chef's pinch grip

    Simply awesome

Despite being listed as a factory second, I honestly cannot see any imperfections on this Enso Hizashi 7" Bunka. It arrived light, incredibly nimble, and with true surgical sharpness right out of the box. It cuts effortlessly and holds its edge remarkably well. I’ve owned knives from major brands like Tojiro, Shun Premier, Miyabi Birchwood, and Zwilling Pro, but this one easily outcuts them all and feels the most solid and balanced in hand. Outstanding knife!

    My First Japanese Steel

After relying on 30 year old kitchen knives we decided to enter the 21st century with new knives. We've bought various knives from several brands. This was my first venture in Japanese steel. The knife was a "factory second" which had some kind of defect which I cannot find, which shows you I shouldn't be a quality control inspector. Nonetheless, for being a "factory second" the knife is razor sharp, very handy at the cutting board and has done everything I've wanted it to, knife-wise. The knife looks gorgeous and to me, is of great quality. This will not be the only Enso knife that will be showing up at my house.

Looks and feels perfect to me

I bought the Enso Hizashi 8” Chef’s Knife as a factory second, and honestly I’m extremely impressed. I was expecting to find some noticeable flaw, but it looks wonderful to me. More importantly, after actually using it, the blade is incredibly sharp and cuts beautifully. The knife feels very comfortable and balanced in my hand, and the handle feels great to use. Between the sharpness, feel, and overall appearance, I’m very happy with it. For a factory second, this was an excellent buy and I would absolutely purchase one again.
