Features

The Enso Ginsan Chef’s Knife is a true Japanese workhorse built for cooks who want performance, durability, and comfort in one beautifully finished blade. Shaped in a versatile gyuto profile, it features a flatter edge that excels at push and tap chopping, plus a gentle curve at the tip for easy rock chopping when needed. The blade is made from Ginsan stainless steel, prized for its excellent hardness, edge stability, and corrosion resistance—delivering a sharp, reliable edge that’s easy to maintain. Finished with a refined nashiji (“pear skin”) texture and crafted in Seki, Japan, this knife pairs serious cutting performance with standout style. An octagonal stabilized maple wood handle offers a secure, balanced feel, while the series’ signature choil notch with rounded spine and choil makes it exceptionally comfortable in a chef’s pinch grip for long prep sessions.

    Time to try

I had never purchased an Enso before...don't know what I was waiting on, but when I saw the Ginsan, I decided it was time. There's no denying its a gorgeous knife. It's more than just a pretty knife, though. The handle is soft to the touch, but is firm and confident in the hand. The balance is excellent and has the feel of a much more expensive knife. Didn't even give it a strop before trying it out...laser sharp. I am well pleased.

    Excellent first Japanese knife

The Enson Ginsan is my first Japanese knife. I purchased this after a lot of research because I understood Ginsan is an easy to maintain steel, and the blade has a rounded spine and choil. I find this blade to be very comfortable to hold, and the blade and handle look even better in person. It cuts well out of the box. After using cheap western knives, I can only describe the feeling as driving a Corolla every day (you know how to drive just fine), but suddenly, one day, someone gives you the keys to a BMW sports car. The difference in experience is just wow. I think this is a great knife, especially as an entry point to Japanese knives. It’s light and easy to handle, and the steel is forgiving if you don’t dry it right away. Look good, feels good, cuts well.
