Description

This Enso Hand-Forged Aogami Super Nakiri features a unique rectangular shape and slightly upturned edge, making it the perfect tool for precisely push-cutting all kinds of vegetables. The Nakiri's blade shape also allows its length to remain consistent after years of sharpening. Nakiri knives are also known as "nakiri bocho", a Japanese-style knife used for chopping vegetables. Characterized by its straight blade edge and squared off tips, the nakiri knife allows you to cut all the way through to the cutting board without having to use a horizontal push or pull.

Each Enso Hand-Forged Aogami Super knife has a slightly different appearance and size because the blade is hand-forged and the handle is teak wood. The double-bevel edge is more robust than a single edge and less prone to chip or nick because both sides of the edge are equally supported, so the hard core of steel is supported on both sides. Each Enso Hand-Forged Aogami Super knife is made by hand using a traditional free forging technique inherited by Japanese swordsmiths.

    Exceptional Nakiri

    I frequently use a nakiri for food prep and at this point I own four, because like all knife styles there are wide differences in blade steels, finishes, shapes, weights, and handle materials and shapes, plus differences in overall balance. But if I could only keep one nakiri this would be the one. It's hand forged and clearly the work of a master craftsman. It has a perfectly sized, shaped and finished blade, an easy to hold handle, and excellent balance. And it's beautiful. Plus it comes with a custom-designed saya. It's really an exceptional nakiri.

    Great for vegetable prep

    I love hand forged carbon steel knives. Enso hand forged and Yoshi are my favorite brands. This knife came incredibly out of the box and glides through ingredients with almost no effort.
