Description

Our most popular CCK cleaver... in stainless! This CCK small slicer is known in Cantonese as a "Sangdao". This CCK is super thin behind the edge and will julienne like nobody's business. Plus, it's made of stainless steel so it's easy to maintain. What's not to love?

CCK cleavers come with a thin coating of food-safe lacquer that will wear away with use. After that, the knife will change color and darken in appearance while forming a protective patina. Once a patina is formed, this will protect the blade and lessen the chance for rusting. Visual imperfections are quite common on these knives and not considered a defect, but the performance of a CCK is never compromised.

Chan Chi Kee (known better as CCK) has been forging Chinese style chef's knives ("cleavers") for over 100 years in Hong Kong. They make a wide variety of shapes, sizes and blade geometries in both carbon and stainless steel. These rustic knives are loved for their no frills performance and are trusted by tons of professional chefs in China and worldwide.

    Chinese style slicing

    This is a great way to start off with a Chinese cleaver. Light and sharp, fun to use and not expensive. Love it and now want a more expensive one. The steel is a bit soft but it’s for dicing, slicing and chopping so no worries. Used it for everything for a few days and got hooked!

    I ordered this cleaver because a friend of mine uses this style of knife exclusively, and he swears by them. I can certainly see why! I was initially skeptical about using a round handle as I usually find that this limits my ability to feel the exact location of the knife, but the wide profile essentially pulls the edge into alignment, and it fits the hand quite comfortably in a pinch grip. It cuts well after sharpening, can scoop wonderfully, and is generally easy to use.

    I gave it 4 stars because I do not believe that I should ever have to sharpen a new knife, and I could slide my finger along the edge without harm. That being said, it is a very pleasant knife to use once the edge was refined.
