Zanmai petty knife ie a winner.
This is a very handy small knife. I use it mostly for trimming facia and gristle from beef. It is extremely sharp, if I had the money I would get seven more to use as steak knives.Aogami Blue super is a terrific steal that stays sharp after lon g use. I have a set of Takeda knives that I love. The Sanmai stainless cladding gives me thebest o fboth the Aogami cutting edge and easier care of the stainless steel.
