I have accumulated whole set of Yaxell knives, plus many other Japanese blades. I figured a Yaxell sharpener would be an exact match for Yaxell blades. And it is. This sharpener is easy to use. It is quick, too, with exacting results. I think some of my knives are now actually sharper than when they were brand new. And this sharpener does not scuff up the Damascus patterns. There is no opportunity for user error.

I began buying German knives decades ago--and bought a ChefChoice sharpener to keep them sharp. Then I started buying Japanese knives. And I learned the angle of Japanese blades is different from German blades. I was leery and reluctant to use my ChefChoice sharpener on my beautiful Japanese knives. I feared I would mess up the very tight angle. I also worried about scuffing the Damascus patterns.

I wondered about this sharpener because it seems so basic and simple. But it is the perfect angle for my expensive blades. It is quicker than my ChefChoice and just as easy to use.
