Description

The Yaxell Hana series offers extraordinary value in a handcrafted Japanese chef's knife with impeccable finishing touches and minimalist simplicity. The core steel ("MOVAX") is highly corrosion resistant and hard enough to hold a fine edge, but soft enough to be more forgiving and more durable than the harder Japanese steels found in other knives. These knives may require a bit more frequent honing, but definitely will not chip as easily as the super hard steels. Yaxell created a simple yet comfortable and perfectly fitted octagonal handle made of dark brown walnut colored pakkawood. The blade is hand sharpened to a 12 degree double bevel angle. Yaxell Hana knives are light, thin and razor sharp. Handcrafted in Seki, Japan with a limited lifetime warranty against manufacturing defects.

    Beautiful knife

    I bought a pair to use as steak knives. Great steel, not as hard to sharpen as super steel knives. I think it’s a perfect compromise. As someone with 20+ years of machining experience, I think I know a little about steel.

    Not perfect, but pretty good

    I don't love it, but I do like it. The pakkawood wa handle is plenty light while providing great grip, the knife feels well balanced. It's really, really sharp, and has had no trouble with potatoes, fruits, and veggies I'm working with in-hand and on a board. I do think the edge is a little on the soft side as I noticed some rolling after just a couple uses, but quickly corrected with a honing steel. Still, I expect a little more (for comparison, I do not see this happen with my Shun blades). It is still a very decent knife at this price point.
