Description

This Enso Hand-Forged Aogami Super Gyuto is a multi-purpose knife, designed for slicing meat, fish, and cutting a head of cabbage and more. It's also useful for those in the meat industry who cut large amounts of meat. The Gyuto is the Japanese equivalent of a western chef's knife but with a slightly flatter curve to the edge. Each Enso Hand-Forged Aogami Super knife has a slightly different appearance and size because the blade is hand-forged and the handle is teak wood. The double-bevel edge is more robust than a single edge and less prone to chip or nick because both sides of the edge are equally supported, so the hard core of steel is supported on both sides. Each Enso Hand-Forged Aogami Super knife is made by hand using a traditional free forging technique inherited by Japanese swordsmiths.

    Love at first slice

    This review is from the perspective of an advanced home cook with no experience working in a professional kitchen. I’m fairly new to higher quality kitchen knives and this knife is my favorite so for. It came razor sharp and the blade is easy to maintain with a leather strop. I’ve not had any issues with rust since I keep this knife clean and dry at all times. This knife glides through meats and vegetables effortlessly. It outperforms my other knives like my VG-10, VG-MAX and SG2 blades from quality makers like Shun and Miyabi. The only other knives that slice and chop this well are my Zuma knives.

    I also appreciate the top notch customer service from C&M. They graciously accepted returns of a couple of knives that I decided weren’t right for me. They are also quick to respond to questions.

    Great Everyday Japanese Knife

    I use this knife daily along with my German 8" chef knife. This Enso looks great, performs well, and holds a sharp edge in a professional kitchen the entire day. I have owned it 3 months now and have not needed to sharpen it. A quick hone at the start of the 14 hour shift, and it lasts the day. I highly recommend this knife for someone looking for their first Japanese style knife or gyuto. The included saya fits perfect, and makes this a seriously great value
