Yaxell Mon 8" Chef's Knife

Great knife. Handle and grip are extremely comfortable. And the blade is so thin the while knife is light. Slices really well but doesn’t chop great. Will cut thru tomatoes, onions, potatoes and even lighter squash just fine. But it’s more of a slicer than a chef knife. The finish on the knife is excellent for food release as well. The matching saya is beautiful and fits great. And as an affordable knife this is a very strong choice. Just font beat it down with dense heavy veggies, get a Nakiri to pair with this knife

Good knife with simple style

It's sharp out of the box, but us knife lovers have to make it better and usually make adjustments for knives right out of the box. This is a little thick behind the cutting edge and benefits greatly from a nice thinning. The price was $60 on sale. It's an excellent price for this knife. I don't think the actual MSRP is appropriate, but I've seen this knife at the $80 price often, which is more digestible.

This handle shape (which Yaxell uses on many other models) is a bit different, yet very comfortable in my opinion. A standard pinch grip feels ok, nothing amazing, yet nothing uncomfortable. If you hold the knife further back so the widest part of the handle is in your palm, it is extremely comfortable. I hold mine like this with the pointer finger right on the bolster and it's perfect.
