Description

The Shun Classic Bunka Knife is used for all the tasks for which you'd use a chef's knife. It's ideal for slicing and push cuts. Julienne, dice, or brunoise vegetables with ease. It's also an excellent choice for cleaning and portioning boneless proteins, and particularly fish. It slices cooked proteins easily and gracefully. This 6-inch size features a slightly shorter blade for easy maneuverability and versatility. It also has a slightly curved edge so that it even works well with rocking cuts.

The Shun Classic line features beautiful Damascus-clad blades with D-shaped ebony PakkaWood handles. The razor-sharp blades offer top performance. Shun's proprietary high-performance VG-MAX steel provides incredible edge retention. Blades are handcrafted of durable clad with Damascus stainless steel, ground and bead-blasted creating a flowing pattern of the layered steel. The result is a line of knives that are sharp, durable, and corrosion resistant, as well as beautiful to hold. Handcrafted in Seki, Japan with a limited lifetime warranty.

    Compact Bunka/Kiritsuke is versatile.

    C&M calls this a Bunka, but the blade etching and box both say 6” Kiritsuke. In truth, it feels like a scaled-down version of Shun’s Classic 8” Kiritsuke—similar lines, just more compact. The edge profile has more curve than most bunkas, which makes it great for rock chopping. That same belly makes it a little less efficient for push cutting, unless you use the back half of the edge.

    In use, it’s versatile. The K-tip works well for detail and even light boning, while the size puts it right in the 5–6” prep knife sweet spot. Balance is right at the bolster, the polished pakkawood handle feels smooth (though I personally prefer the grippier Blonde series), and as usual with Shun, the fit and finish are flawless.

    Overall, this is less of a “true bunka” and more of a compact chef’s knife with kiritsuke styling. Light, agile, and very capable.
