The Shun Narukami Blue #2 Carbon Steel 3.5" Paring Knife is an indispensable kitchen prep knife. Shun Narukami is a simple carbon steel alloy that provides excellent edge retention and toughness, and can be re-sharpened easily. Yet, like all carbon steels, Shun Narukami requires additional care. Cleaning and drying immediately is key. Over time, the edge will darken, developing a patina which, when formed, will also help protect the edge.     Worth every penny. Easily gets razor sharp.

    This blue steel 2 pairing knife has exceeded my expectations by miles. Gets razor sharp easily and stays sharp longer than any other Shun I own. And I’ve got them all. Must wash and dry immediately after use. Just an excellent investment.
