Description

The Shun Dual Core series features a Damascus blade made from two premium-quality, high-carbon stainless steels. 71 alternating micro-layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the herringbone pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the Dual Core's extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Dual Core blades are thin, light, and strong. Traditional Japanese octagon-shaped handles in ebony PakkaWood provide a comfortable and secure grip to complete the look of these beautiful knives.

    Not Quite Right

    While I like the concept of this knife, there's something not quite right in its execution. The blade is fine. I like its size and shape--kind of a ko-kiritsuke. It's got a very interesting Damascus pattern and it's plenty sharp. (I haven't owned it long enough to see whether being a dual-core blade it develops a mini-serrated edge as it ages, but that would be a plus.) The problem is with the handle. I'm good with an octagonal handle. But Shun made a pretty feeble effort with the PakkaWood here; when I first saw it I thought I was looking at plastic. The greater problem though is that this knife clearly has a stick tang and is the most blade-heavy knife I own. It's practically weightless after the bolster. The balance is just off. While it's risky to talk about a knife I don't own, I'd say if you're interested in a Shun Dual Core "Master Utility" knife consider the Shiranami with its full tang and metal endcap. The balance has to be better and the extra ounce of weight will also be helpful. But I do give this knife points for coming with a custom wooden saya--so much nicer than almost any after-market sheath you could find.
