Thanks C&M, my new Shiro Kamo Santoku is an absolute delight. The Damascus-clad blade with its striking pattern and sharp etched kanji looks gorgeous, especially paired with the beautiful quince wood handle. In a pinch grip, it feels incredibly light—like a feather—with perfect balance that makes it effortless to maneuver.
It arrived razor sharp and slices through product with zero resistance, especially keeping it close to my new strop. True laser performance! Beautiful, nimble, and a joy to use. Highly recommended for anyone who loves agile carbon steel Japanese knives. The only "downside" of this knife is I love the finish too much. So much so, I bought a tube of Filtz and polish it after every prep sesh. I know that is a matter of personal preference and not knocking a beautiful patina. I just love the OOTB look, so for now, I'm a happy polishing fool.
