Takamura SG2 Migaki 8.25" Gyuto

Great knife and great customer service. My knife got lost by UPS in shipment, and cutlery and more did a great job of making it right and sending me a replacement in timely and diligent manner. The knife is also, true to its reputation, extremely sharp out the box. I’ve barely used it yet, but it seems like a great knife. Thank you Cutlery and More, going forward you’ll definitely be my first choice.

After a few weeks I really like this knife, it cuts better than some of the more expensive knives I have. The thin profile cuts nicely through onion and chicken. While I used to be a carbon steel guy, as a father, having stainless like this when things are hectic is really nice if you don't get to cleaning it right away.

I do prefer an octagonal handle, but not knocking the score since I knew the handle type when I bought it.

The knife is wicked sharp, upon arrival. It is well balanced and slices beautifully. I haven't used it enough to speak to edge retention.
