Description

Zuma is a Cutlery and More exclusive hammer forged bunka knife that we made sure checks all the boxes on your list for performance, function and feel.

Construction:
First, we insisted that the knife be forged. Although labor intensive, the hammering process is worthwhile due to the increase in strength and ease of sharpening, which is a result of the steel's grain structure becoming better aligned. It also allows for a single, thicker piece of steel to be used. Once we determined that this knife would be forged, we then knew that it must be hand ground and sharpened. A distal taper ensures that the knife will cut smoothly and a convex grind gradually thins out the blade starting right at the spine. This type of blade geometry and balance allows the knife to glide effortlessly through foods. No need to apply lots of pressure, in fact too much pressure may actually be detrimental to the knife's edge as it flies through your ingredients and hits the cutting board.

Profile:
The Zuma 7" Bunka Knife is designed for cooks who value precision and control. Its 2.1" (53mm) blade height provides excellent knuckle clearance and stability during detailed prep work. A pronounced flat section of the edge makes it ideal for vertical and push chopping, while a gentle curve near the tip allows for effortless maneuverability and fluid cuts. The refined kiritsuke-style tip excels at precise slicing and intricate tasks. Slightly thinner than the Zuma Chef’s Knife, it delivers a lighter, more agile feel without sacrificing cutting power.

Steel:
Once we established the above requirements, we were in search of what might be the best steel to use. Our maker recommended to us BG42, which is an American stainless high speed tool steel. After some research and discussion with the blacksmith, we discovered that this steel is ideal for forging and offers a great balance of corrosion resistance, toughness and edge retention. For example, the hardness rating of 61-62 HRC falls in between steels like VG10 and SG2, but has better toughness, which was imperative if we were going to make a knife as thin behind the edge as we reasonably could without making it too fragile.

Finishing:
The finish on the Zuma starts with what is referred to as a "kurouchi" or blacksmith's finish and is a result of the forging process. The durability of kurouchi finishes vary, but the Zuma goes through an additional black dye process that makes it a little smoother and more wear resistant. The mid blade is then ground and polished to a hazy "kasumi" finish, while the very edge is highly polished. This makes for, what we think, is a beautiful overall appearance and enhances the food release throughout. We chose an octagonal ebony handle in the traditional Japanese style that is both smooth and comfortable, yet solid. Last but not least, we made sure that our artisans polish the spine and choil areas of the blade for comfort using any grip.

    7 inch razor blade

    Had a few issues with the bunka I was originally shipped, contacted CS and they had a replacement on the way within 24 hours. The replacement was excellent quality and is slicing through vegetables like nothing I have ever used before. I believe this blade will serve me well for years to come. Razor sharp!

    A joy to use

    I am a neophyte when it comes to Japanese style knives. That said I was a cook for the formative years of my my life. I am more than adept at wielding a knife. I had to reprogram myself when it came to the made in China aspect of this knife. That has taken place because of this knife. The fit and finish is superb, The sharpness out of the box was razor sharp. It holds that edge and so far I have only used a leather strop. The blade is deep enough that I don’t knock my knuckles when chopping. I also love the Bunka Tip. Waiting for other styles to join the Zuma stable

    This Knife Is Great

    I was going between the Zuma and the Enso Hachi bunka knives. I ended up choosing this Zuma. I have no regrets at all. It came very sharp and has been easy to maintain. I use Tsubaki oil on the handle every couple of weeks. And I may actually have it a little sharper than when I got it. I have used it now for 6 months and can say it is one of my favorites. It cuts extremely smoothly through carrots, celery, onions and other veggies. I own a Masutani tall Nakiri, also bought here, and have to decide each time I do prep which one I want to use. The Zuma Bunka is flat like a Nakiri but has the advantage of the K-tip when I need to do some fine work.

    If you're looking for a bunka at a great price, this should definitely be on your short list.

    Great Knife

    This is a great workhorse of a knife that's thin enough behind the edge to perform beautifully. Great for all-around use and can take a beating and be fine. Before gifting a family member a nice knife, I would bring this knife over to have a sharp knife available. It's also travel friendly incase you need a sharp knife on the go.

    Astounding Performance, Easy Sharpening, and a Superb Value

    I cannot recommend this knife more highly. It holds its edge beautifully, and it outperforms knives I spent more than twice as much to obtain--while being refreshingly easy to keep razor sharp. I strop it after each day's use, and touched it up only once with a fine diamond stone last week. I have not babied it in the least, and in a bit over a month it has become my go-to meal prep favorite.

    The BG-42 steel is fascinating. It really does have a feel all its own. And I actually find myself concentrating on the lightest possible touch when using either a push or tap-cut. Tip work is a pleasure, too. The profile works well along the entire edge, and it is a brilliant overall workhorse.

    If this series continues, my fondest wish would be for a tall, lightweight 7" Nakiri with a similar balance point and relatively dead-flat profile. That would be an absolute rock star hit!
