    A Chef's Knife So Nice I Bought It Twice

    I bought this Miyabi Koya as well as a second Miyabi Koh because it was such a great deal, I wanted to send one as a gift. I've bought other Miyabi knives, including the Mizu and Birchwood lines from Cutlery and More, and while this is about half the price of those knives, they perform just as well. Sharpness out of box is outstanding, and it cuts everything from meats, to veggies and fruits. Now, along with my Takayuki Ginsan Gyuto in one kitchen, this is my go-to watermelon slicer and go-to knife in our Chef's kitchen. Package on this one was not as nice as the Koh (plastic box here vs. actual knife box in the Koh). The finish is pretty incredible on both knives and I love that the knife bolster is so unique. It's not your traditional bolster you find on a Japanese knife with hexagonal handle, but it's also not rounded like some of the other Miyabi knives. Surprisingly comfortable and well balanced in hand.

    Wonderful knife for home or professional kitchen

    I am an executive chef of a hotel for 20 years, have used many knife brands. Miyabi is one of the best. I have the birch wood series 9.5 inch which I have had for a couple years and only like to bring it out in special situations due to its cost. I saw this Miyabi Koya 8” and thought it would be perfect for everyday use. I reshaped the bevel and sharpened and polished (I do this with all knives regardless of notoriety) and the knife is phenomenal! I would love to see it in more styles, rocking santoku, serrated bread knife, santoku etc…
