Description

The Enso SG2 Boning Knife features a slender shape blade, enabling to pierce the flesh of poultry, fish and beef. The shape also allows you to easily follow closely to the contour of bones. Enso SG2 features an extremely sharp cutting edge. Constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 101 layers combined with alternating soft and hard stainless steel. The corrosion resistant powdered carbon steel has an unprecedented 63 Rockwell hardness. Powdered steel is used because it ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge. The surface impresses a fascinating Damascus design pattern. The handle is made of black canvas micarta with a stainless steel bolster, red spacers and Samurai Crest. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance. Handcrafted in Seki City, Japan with a lifetime warranty.

    Looks and feels perfect to me

    I bought the Enso Hizashi 8” Chef’s Knife as a factory second, and honestly I’m extremely impressed. I was expecting to find some noticeable flaw, but it looks wonderful to me. More importantly, after actually using it, the blade is incredibly sharp and cuts beautifully. The knife feels very comfortable and balanced in my hand, and the handle feels great to use. Between the sharpness, feel, and overall appearance, I’m very happy with it. For a factory second, this was an excellent buy and I would absolutely purchase one again.

    Quality and good value

    The Enso HD 8” Chef’s Knife is beautifully balanced, extremely sharp, and feels great in the hand. It handles everything from vegetables to meat with excellent precision and control. Despite being sold as a factory second, the cosmetic imperfection is minor and has no effect on performance. The fit, finish, and overall quality are excellent. A fantastic Japanese-made chef’s knife and an especially good value at the factory-second price.

    Can't believe it's a "factory second"!

    This is a beautiful knife! I can't find a single thing wrong with it that would classify it as a "second". It's beautiful and it is extremely sharp! And I really like the bunka style. A lot of versatility! I would not hesitate 7 buy another 7 "factory second" if they are all this good! Highly recommend!
