    Great first Chinese cleaver chef knife

    I am used to using a heftier meat cleaver and was intrigued with the Chinese style cleaver. The thickness of this blade strikes a great balance of not too think or too thick which makes it an excellent chopper and slicer. It is not delicate like a shun but not overly hefty either. I really love the weight and forward balance of it. The handle was a bit dry for my liking so it needs a little bit of oil before you start using it. Great value for a Japanese knife at this price point. Knife is very basic but still elegant.

    I’ve Been Very Taken With Tojiro Knifes As A Whole , There Rarely Seen Or Mentioned Are Some Of There Higher End Lines, They Are Gorgeous!! Now For This Cleaver , GREAT VALUE!!! , This Cleaver was A Great Find , I Was Looking For A Cleaver To Add To My Growing Pile Of Kitchen Blades. It Fits A Really Neat Spot As Not Being Huge Nor Small , But It’s Own Spot , Heftyer Than It Looks And Terribly SHARP , It Had A Nice Bite To It ,Great Push Pull Cutting And Light Rocking , I Purposely Had Carrots , Celery, Potatoes, And Parsnips And Onions Ready To Decimate For A Salad And Stew I Was Concocting , It Was A Joy To Use On All Comers !! , It’s Smaller Size Fits My Wack Kitchen Dementions Wonderfully!!! It Wiped Off Easy With Warm Water And Little Soap On A Dish Towel .     Nice edge, small handle, wedging

    This was last year’s Milk Street and Serious Eats recommended cleaver, and it has a nice edge and handles slicing of thin veg well. However, it wedges with any taller veg, and its handle is quite small. Tojiro makes a barrel- handled version, which I would think greatly preferable, but the wedging would persist. The handle’s heel is unfinished and rough, but that does not detract from its use. This knife still is a pretty good deal, but the undersized handle and wedging problem make this a blade that I wouldn’t recommend.
