This is my second Yoshikane honesuki. I used it tonight to trim up some lamb loin chops for dinner. It’s a Yoshikane so nothing less than excellent is expected. It delivered. This knife has excellent fit and finish, fantastic geometry, and is wicked sharp out the box. I highly recommend this knife.

I bought this because I previously bought and fell in love with the kiritsuke. It is as wonderful, and a joy to use. Came super sharp out of the box. Fit and finish is impeccable. The kurouchi finish is quite light, very close to the nashiji finish on my kiritisuke. The handle is awesome. I have used it mainly for general prep, for which it works great. I did not buy it exclusively for breaking down chickens, but rather as a utility knife, and it serves that purpose well.

I dig knives. All kinds of knives. This Yoshi really stands out. Absolutely beautiful piece and extremely sharp. Haven't d-boned anything with it yet but, it goes through meat like crazy. Gotta keep it cleaned and oiled though. Wouldn't want to ruin a $500 knife.
