Description

The Tojiro DP Damascus Nakiri Knife is perfect for mincing, slicing and dicing vegetables for stir-fry, salads, soups and more. The Tojiro DP Damascus Series features a Damascus pattern on each blade, created by the forging of 37 layers of both low carbon and high carbon stainless steel folded over the thick VG-10 core of premium cobalt alloy steel. This process is finished very delicately and makes for a truly impressive appearance. The Rockwell Hardness of 60 is hard enough to hold an edge, but easier to sharpen than super hard steel. The triple riveted traditional style Micarta handle with bolster contains heft and balance and the closed bolster collar allows for full and complete sharpening of the blade. The thin blades, feature a razor sharp edge that is hand-honed and sharpened by skilled craftsmen in Japan.

    Well designed knife

    This is the first Tojiro knife I have purchased but I'e been familiar with the brand for years. This Nakiri is basically a 180mm knife. Most Nakiri knives are 160-165mm. The length of the knife is perfect for all the tasks of a shorter knife and very capable shredding cabbage or other larger veggies. The knife is really well balanced , light and nimble, with a superb fit and finish. I looked for a Nakiri for a long time and this one checked all the boxes and performs beautifully. The knife arrived very sharp and the 60 Rockwell is appealing for edge retention .

    Cutlery and more has always been a pleasure to deal with and their specials can't be beat

    Don't hesitate...buy this knife!

    I've read a lot of old posts about Tojiro being a "value" knife with fit and "ok" fit and finish. I have eight knives from various manufacturers and I would definitely rate this as one of the best -- and the fit and finish are second to none! They must have fixed any problems in their manufacturing or raised their own expectations of a quality knife because my knife was 100% world class! The handle is very comfortable. A few strokes on a 5,000 grit stone out-of-the-box made this knife wicked sharp. The Damascus effect is very good, but not spectacular. I would not hesitate recommending this to a friend or purchasing other knives from this line. Very impressed overall.

    Incredible function

    I'm an amateur cook that has cooked at pro kitchens. The sharpness and clean function is beyond belief. With this steel and shape, it makes tough vegetable cuts a pure pleasure. I LOVE IT!!
