Description

The Enso SG2 Nakiri Knife is simply a Japanese-style vegetable knife with a straight edge. Use for cutting through a wide variety of fresh vegetables. Ideal for stir-fry dishes or salads, to make vegetable prep tasks even easier. Enso SG2 features an extremely sharp cutting edge. Constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 101 layers combined with alternating soft and hard stainless steel. The corrosion resistant powdered carbon steel has an unprecedented 63 Rockwell hardness. Powdered steel is used because it ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge. The surface impresses a fascinating Damascus design pattern. The handle is made of black canvas micarta with a stainless steel bolster, red spacers and Samurai Crest. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance. Handcrafted in Seki City, Japan with a lifetime warranty.

    First Enso knife in SP2 steel and I am very pleased with it

    I sharpen knives professionally (just a side job in the community). I do it for home chefs, restaurants, and even a few sushi chefs. I've handled a lot of knives and can say that this is a high quality tool. To start, the aesthetics on this knife are very nice. I love how it looks and feels. The fit and finish is excellent. The craftsmen used quality materials. It was a good choice of steel. Most factory knives are not as sharp as they could be. This knife, however, was exceptionally sharp right out of the box. I've been using daily for over 2 weeks for all of my cooking (including vegetables and chicken - yes, I know that the nakiri if a vegetable knife). The knife has kept it's edge quite well. There has not been any need to strop it. It is still cutting beautifully. I also purchased the wooden saya that Enso sells to go with this knife. I'm glad I did. I don't like using other people's dull knives when I go on vacation so now I can transport this easily.

    Beautiful Knife

    Yes, I said it was a beautiful knife so why did I give it 4 stars? I guess it was mostly a personal preference thing, but this is a veggie knife by design and I want my veggie knife edge to make contact with the board across most of the blade (a mostly flat edge) so I don't have to be concerned with attached slices or extra forward/backward movement. This one has a slightly curved edge and so it is kind of a rocking profile. Not what I wanted to I had to send it back. Quality appeared to be wonderful as was the fit and finish.
