The Miyabi Kaizen collection combines the best hardening technology with the artistry of traditional Japanese craftsmanship. The resilient core of VG10 super steel (5000DP) is protected by a stunning 64-layer flower Damascus pattern. The Cryodur blades feature exceptional sharpness and durability thanks to their innovative, ice-hardening treatment. Artisans hand-hone the blades with the historic Honbazuke method. This attention to detail translates into precision cutting for Miyabi Kaizen users. The blade is balanced by a refined D-shaped handle made of black linen micarta. With a wood-like texture, the comfortable handle won't slip from your hand and acts as a moisture repellent. Handcrafted in Seki, Japan.

    Home chef to Professional kitchens

    Purchased for my brother, he is a professional chef that cooks and teaches at University and moonlights his catering company. He says this knife is night and day compared to his old Wusthof. Not only is it aesthetically beautiful but he has been putting it through its paces. He spoke so highly of it I purchased the 8" for myself, see my review there! Also very fast ship times and easy to use online store. 10/10 will buy again.

    Home chef to Professional kitchen

    Per my other review (see 9.5-inch), I had to buy myself one after the positive review from him. Now I'm no trained professional but when you're helping your brother with a catering event and need to prep two to three hundred pounds of vegetables, it's nice to have a tool in your knife bag that is built to this high of standards. Very comfortable in the hand, very well balanced, sharp as all heck (can keep and edge), and is a great talking piece while slaving away in the kitchen. 10/10 will shop again!

    Amazing knife

    This knife is super sharp but the blade is very tempermental. I made the mistake of leaving it in soapy water after trimming chicken for part of dinner service and when i took it out there was chemical decay. My fault, youre not supposed to even have the blade wet or dirty for any length of time, but it was destroyed. Im not bashing this blade at all, on the contrary. Cutlery and more replaced it as a courtesy (they're incredible). I'm reccomending it to someone who will give it the care it needs. This knife is easily the sharpest i own. Sharper than my shuns, sharper than my mcusta zanmai. Not light, not heavy. Handle feels great. Buy it and treat it like gold.
