    Samurai Sharp

    I dropped a decent amount of money on a beautiful Santoku from a different manufacturer a few years ago but the steel didn't like to stay sharp, plus it's more of a chopper for me now. This Kurosaki Sujihiki has a bit of a Kiritsuke style to the tip. The fit and finish is top notch. Beautiful hammer work on the top part of the blade. The San Mai steel is mesmerizing. The Japanese style handle makes it very light in the hand for such a long knife. But when it comes down to it, this thing is like a scalpel, which I have used extensively in my former life as a surgeon. I just split a rather large pork tenderloin down the middle and it was literally a short push cut to bring the tip towards the cutting board and one pull cut. I was expecting it to be sharp but dang. It's by far the sharpest kitchen knife I've ever used. Can't recommend it more highly!!
