Description

The Miyabi 2-stage Diamond & Ceramic Hand-Held Knife Sharpener is designed to restore a razor-sharp edges onto knife blades. Place the sharpener on an even, non-slip surface and make sure the knife blade is clean and dry. Hold the knife sharpener by pressing slightly on the surface to secure the unit. With your opposite hand, place the knife vertically (90°) into the desired module at the heel (blade closest to the handle). If your knife edge is very dull, begin with module 1, if you only require fine-tuning the edge, move to module 2. Using light pressure, draw the blade towards you from the heel to the tip keeping the blade level.

    A great hand held sharpener

    I have owned two of these sharpeners. The first one wore out after years of use and I liked it so much I was happy to learn that it was still available. This sharpener is great for Japanese knives because of the angle the blade is held at. I use the diamond wheel when I really need to sharpen my knife and I use the ceramic wheel after the diamond wheel but I also use the ceramic wheel between uses just to keep a keen edge. I bought this sharpener for my son-in-law who also owns Japanese knives.

    Effective

    It worked perfectly. I had a high-carbon steel set of knives that were so hard to get sharpened properly. They actually had a 12 degree pitch instead of 10 degree, but a previous sharpener (I mean a person) had ruined them anyway, so nothing to lose. It took very many strokes through both stages (mostly through the diamond stage), but they ended up with a great 10-degree edge (10 degrees per side, or 20 total), flat and straight and sharp. The knives went from squashing celery to cutting into celery just on their own weight without pushing. Very important not to press too hard when sharpening or you might break the ceramic, and don't use it on traditional German steel knives intended for 15 to 20 degrees per side. I completely reshaped four knives with it, and it still seems to work; it was not designed for such heavy use, so it should be great for normal resharpening for many years.

    Sharpens well

    I’m on the fence with this sharpener. It sharpens well but it scratched up the side of the Miyabi knife that has a beautiful design on it so I’m not too happy about that. The Miyabi blade had a small chip in it as well that was noticed before sharpening. The knife is only a few months old so I’m disappointed whether it was caused by the sharpener or not. I guess I’ll never know.
