Features

The Enso Ginsan Chef’s Knife is a true Japanese workhorse built for cooks who want performance, durability, and comfort in one beautifully finished blade. Shaped in a versatile gyuto profile, it features a flatter edge that excels at push and tap chopping, plus a gentle curve at the tip for easy rock chopping when needed. The blade is made from Ginsan stainless steel, prized for its excellent hardness, edge stability, and corrosion resistance—delivering a sharp, reliable edge that’s easy to maintain. Finished with a refined nashiji (“pear skin”) texture and crafted in Seki, Japan, this knife pairs serious cutting performance with standout style. An octagonal stabilized maple wood handle offers a secure, balanced feel, while the series’ signature choil notch with rounded spine and choil makes it exceptionally comfortable in a chef’s pinch grip for long prep sessions.

  • 9.4" (240mm) gyuto-style chef’s knife for all-purpose slicing, chopping, and prep
  • Flatter edge profile ideal for push cutting and tap chopping, with a curved tip for rock chopping
  • 61-62 Rockwell Hardness; Ginsan stainless steel delivers excellent hardness, durability, and corrosion resistance with a textured Nashiji ("pear skin") finish
  • Choil notch with rounded spine and choil for exceptional comfort, particularly when utilizing a chef's pinch grip

  • Made in Seki, Japan

    What a beautiful surprise!!

This knife is more beautiful than the pictures can possibly display. The performance matches the beauty. Wish they had more in the series.

    Fantastic Knife

This is a great example of how to make a knife for anyone. It's lightweight, thin behind the edge, well finished, and it looks great. I generally don't love 210mm gyutos (I prefer 240mm), but this one is so good I don't mind the smaller size. Heel height is good for a 210mm and not too shallow like others. It moves through produce effortlessly. If I had to nitpick I'd say it's slightly front heavy and the handle could be a little more comfortable (though it is pretty) if the edges were chamfered. This knife is just a pleasure to use. I hope they expand this line and make a 240 gyuto, a K tip, and sujihiki. Heck, let's get a petty, and honesuki too.

    Time to try

I had never purchased an Enso before...don't know what I was waiting on, but when I saw the Ginsan, I decided it was time. There's no denying its a gorgeous knife. It's more than just a pretty knife, though. The handle is soft to the touch, but is firm and confident in the hand. The balance is excellent and has the feel of a much more expensive knife. Didn't even give it a strop before trying it out...laser sharp. I am well pleased.
