Description

Drop forged from a single piece of high carbon stainless steel, these Sabatier knives are made in Thiers, France by Sabatier Aine & Perrier. The rounded French style bolster adds weight and balance while the forged method of knife making creates a high quality knife that will take a fine edge and hold it. The full-tang riveted handles are crafted of elegant olive wood for a premium feel. Hand wash only (not dishwasher safe).

Sabatier Aine & Perrier has been making high quality chef's knives in the Bellevue village area of Thiers, France for over 200 years. They registered the K Sabatier trademark in 1834, making them arguably one of the oldest knife makers in the region. Due to being an unprotected mark that was used for many years, you may find the Sabatier brand on many knives of varying quality and origins. Rest assured, K Sabatier is one of, if not the original, Sabatier knife.

    K Sabatier Hollow Edge Slicing Knife - A classy great slicing knife

    I was searching for a worthy replacement for a commercial-grade slicer my wife gifted me decades ago that I regrettably ruined while carving a turkey. I own a Japanese Sujihiki-style knife, which excels in precision but struggles to slice ham and brisket as thinly and effortlessly as a traditional Granton-edge carving knife.

    After comparing commercial-grade replacements and their costs, I decided to invest in something more refined. I nearly pulled the trigger on the Shun Kanso Brisket Knife with Saya. It was a great deal, but the wood handle didn’t quite win me over. I weighed options from Victorinox, Shun, Global, and Wüsthof, each with their merits and price points.

    Then I came across the K Sabatier. After researching the company’s heritage and steel quality, I was impressed. The knife matched exactly what I was looking for... classic design, solid materials, and a fair price. It arrived within two days and immediately impressed me: beautiful craftsmanship, excellent balance, and razor-sharp performance.

    I tested it on an Applewood Smoked Master Carve half ham, and the results were stunning. Compared to my very sharp Yaxell slicing knife, the Sabatier sliced thinner, cleaner, and with less effort. It’s everything I hoped for in a carving knife. It's ideal for ham, brisket, or any protein that deserves respect on the cutting board.
