The Miyabi Kaizen collection combines the best hardening technology with the artistry of traditional Japanese craftsmanship. The resilient core of VG10 super steel (5000DP) is protected by a stunning 64-layer flower Damascus pattern. The Cryodur blades feature exceptional sharpness and durability thanks to their innovative, ice-hardening treatment. Artisans hand-hone the blades with the historic Honbazuke method. This attention to detail translates into precision cutting for Miyabi Kaizen users. The blade is balanced by a refined D-shaped handle made of black linen micarta. With a wood-like texture, the comfortable handle won't slip from your hand and acts as a moisture repellent. Handcrafted in Seki, Japan.

    Miyabi knives are the best!!

    This Miyabi knife is a perfect size for slicing tomatoes and intermediate size vegetables. It cuts through tomatoes like butter. I have 2 paring knives, a chef's knife and Santoku knife. They are razor sharp and make cooking a total joy. The 4.5 inch knife is a perfect compliment to the others. They are beyond easy to sharpen. I highly recommend any Miyabi knife for anyone who loves to cook!
