I bought this knife to add an affordable Aogami Super carbon steel blade to my collection and to see if there was much of difference in performance to a SG2 Santoku. The blade arrived superbly sharp and I have touched it up using Naniwa Chocera stones. It sharpens really easily on those stones. The blade can be a bit sticky if I get lazy with my cutting technique.
The one downside was that the painted writing on one side of the blade was really thick and made drying the blade sticky and less than ideal. After smoothing the paint with 10 000 grit sandpaper this issue has been resolved.
This knife has a very different feel to my Takamura SG2 santoku but both work great.
