    Great medium sized all around prep knife

    Wonderful gift for my mother in law. She said it fits her hands perfectly. Craftmanship and quality for the price was excellent. I handled the knife a bit and love the size as a prep knife to pair with a larger chef knife. Fit and finish on the handle was flawless.

    My New #1 Knife

    Advanced home cook with decent knife skills here.

    I instantly fell in love with this knife - literally from the moment I pulled it out of the box and held it. I've had it two weeks now, and it's become my go-to #1. The feel, the handle, the sharpness, the shape, great steel; all make for a knife that is useful for many tasks and a pleasure to use. It's tomato season, and this knife is ideal for slicing and chopping tomatoes. It literally slid right through the peel with just a slight push, and it felt like gravity alone was doing the work. It's nimble like a parer but long enough for other kinds of work.

    There's a good amount of knuckle clearance when working on a cutting board. I just went through a few cucumbers for a cucumber salad in no time. The knife nimbly and quickly produced nice, uniform, thin cucumber slices. I usually use a mandolin slicer for my cucumber salad, but this knife made it not worth getting out the mandolin.

    It's literally the most perfect knife I've ever used. It is my first exposure to a bunka style knife and I like it so much, I just ordered the 7" Enso Hizashi 7" bunka. (The prep knife is a small bunka, after all.) I don't think this knife would disappoint anyone when used for its intended tasks.

    Wonderful knife to use and look at. Nice in between size, smaller than chef and larger than paring knife. Have found many times it filled that notch of size. Fast delivery also!

    Buy two…

    I bought the Enso 5.5” Prep Knife for a camping trip. My girlfriend used it one day at home and it is now her go to knife. Friends came over and used it, then asked where to order one. I have now given away several to friends who love to cook. I own other Japanese knives and will say you can spend a lot more for a big name knife, but the Enso is a kitchen champ at a reasonable price. Great looking, well balanced, easy to maneuver, and takes a great edge. I did find that the Hizashi handle feels slightly larger and is a better fit for me.
