Care: Wash and dry by hand (not dishwasher safe). This knife has a full carbon steel blade and cladding. It will rust if not cleaned and dried promptly after use. Any rust that forms should be removed. Over time, if cared for properly, this knife will develop a beautiful and protective patina.

Sanjo school forged in Fukushima. Thick spines tapering nicely towards the tip. Midweight yet thin behind the edge. I've tried eight Sanjo gyutos. Shinkiro cuts the best.
Flat Yoshikane profile but can still rock. Spine intentionally left rustic. Helps me scrape ingredients off the board. Some owners smooth with sandpaper.
Damascus is beautiful. Made a nice blue-red patina after prepping for sausage stir fry (photo). Will turn more gold-brown over time.
Note: The light reddish-brown areas on the Kurouchi (photo) is not rust. It's a quality of the iron that was sourced. I've seen tis on many Shinkiro gyutos including my 210.

Shortly after receiving my Shinkiro bunka, I decided to pull the trigger on a full-size gyuto—and I couldn’t be happier. Fit and finish are exactly what I’ve come to expect from the Shinkiro line. It arrived incredibly sharp out of the box, and to my surprise, mine has a very noticeable dimple pattern.
I’m also really enjoying the extra weight and length on this version—it gives it a more substantial, workhorse feel without being unwieldy. Couldn’t be happier with this purchase!

Such a beautiful and well made knife. Got it as a present for my husband. I wish I’d read all the info about carbon steel before using it though because I cut some onions with it and it left some “tarnished look” on there rather than the blue patina. Use for meats, not on anything acidic! Gorgeous knife nonetheless!
